Easy Homemade BBQ Sauce (refined sugar free)
So this weeks recipe is another sauce! Inspired by my summer of eating a low Fodmap diet (google it if you dont know what that means), I decided to create my own BBQ sauce from scratch, that had no onion, garlic, or refined sugar. You can always add onion/garlic powder if you want more flavor, and are able to eat it. The reason I love this recipe so much is that its sweet and also savory. A lot times BBQ sauce from the store can be too sweet, and not enough tang, smokiness, or spice. On the other end of the spectrum, it can be the opposite, where it is…
Simple Homemade Marinara (with fresh tomatoes)
Hi everyone! I hope ya’ll are enjoying these last two weeks of Summer. It has been a busy one for me personally! Lots of fun, family time, booming business, and cooking things in the kitchen. With Fall approaching quickly, I think everyone is probably ready for cozy fires, fluffy blankets, pumpkin bread, and home decor with burnt orange accents. With the change in season, comes a change in food. I happily transition to warm and hearty foods like soup, chili, casserole, and muffins. Speaking of warm and delicious foods, I bring you this week’s recipe: Homemade Marinara Sauce (made with fresh, not canned tomatoes)! It all started because I have…
Spring Green Salad with Chicken
and Strawberry VinaigretteWe are all saying a huge HELLO to Spring and warm weather! I think we all could use it, and I personally am so excited for the warmer weather and sunshine. I love Spring and Summer inspired food like fresh green salads, cold pasta salads, smoothies, ice cream, BBQ food, lemonade etc. It’s refreshing food that brings family and friends together. The reason I love food so much is because it connects people and I love serving others by giving something homemade to them. It shows them you love and care for them. With that being said, here is today’s Spring inspired recipe: a savory, fresh, and bright green salad…
Instant Pot Chicken Tacos
These Chicken Tacos may look like your typical tacos, but let me assure you, they are so much better. I don’t know about you, but I try and use my Instant Pot as often as possible. This amazing magic cooking machine that was invented, makes my life so much easier. You are literally throwing all the ingredients into a giant pot (your meat can even be frozen), hitting start, coming back 30 minutes later and BOOM your dinner is done. This is the DREAM. With this recipe your chicken can be frozen or fresh, you just have to adjust your time and water amount accordingly. If you are using frozen…
Homemade Vegan Pesto
Honestly I am really excited about this simple, easy, vegan pesto. I came up with this recipe because 1. I can’t have basil because I am allergic so I wanted to come up with an alternative because I really love and missed pesto. 2. I also am allergic to walnuts which is a common ingredient in most pestos. Pine nuts are also on the ingredient lists on store bought pestos, and pine nuts at the store- they are expennssiivee sis. Therefore, I came up with some different ingredients as a solution to my quandary. Hence this beautiful, creamy, smooth, aromatic pesto. Of course, there are always variations of the recipe.…
Gluten and Dairy Free Chicken Meatballs with GF Pasta and Marinara
Summer 2021 has flown by, and we find ourselves at the beginning of September. The end of swimming in the lake, tanning by the pool, and picnics at the park is here. However, I am excited beyond reason, because that means that Fall is here! Which means the beginning of warm soups, pumpkin spice lattes, strolls through the park wearing scarves and beanies, and savory comforting food like spaghetti and meatballs! Which brings me to our recipe today! I love this recipe because it is quick, has simple ingredients, and is a delicious savory meal, done in under 30 minutes. You can definitely whip this up whether you are a…
Cold Pasta Salad with Corn, Chicken, and Vinaigrette
Well hello there my blog friends and family, I hope you are having a fabulous week. It has been in the 90’s here in Idaho for weeks now, so it’s been a hot summer. For me, that means lots of pools, rivers, lakes, cold drinks, and eating food that is generally cold if possible. That’s why I love creating cold pasta recipes in the summer because the last thing you wanna eat when you are hot, is a hot meal. I created this recipe with a small and mighty pasta called orzo. If you have never heard of orzo pasta, it is a short grained pasta, usually made of white…
Whole 30 Chicken Normandy with Apples & Coconut Cream
Hi folks! Happy (almost) Fathers Day! I am currently on day 17 of the Whole 30. I have been trying to come up with creative and delicious dinner ideas that are full of protein, delicious flavor, and healthy. I had never made Chicken Normandy before, but I knew that I wanted to make it, and I wanted it to be healthy and Whole 30 approved. The regular chicken normandy calls for creme fraise (basically sour cream), regular flour, brandy, and some other ingredients that are not gluten or dairy free. So I substituted coconut cream, chicken stock, almond flour, and it tasted great! All the amazing flavors, but better for…
Green Salad with Pickled Onions and Balsamic Dressing
Well hello hello. Memorial Day weekend is upon us! That means we will see lots of friends and families getting together, BBQing, making meals, and just spending time with one another. I am grateful for all the men and women who have devoted their lives to serving our country, I am excited to honor them, and I hope that they feel loved and appreciated. On a lighter note, my favorite part of a holiday is the food and the people. I am an extrovert, so hanging out with humans and connecting with them, makes me come alive. One of the main reasons I love creating recipe and cooking food, is…
Easy Chicken Pot Pie
Happy Spring! It is now officially Spring, and Easter is around the corner. Even though, here in Idaho it is currently snowing right now, according to the calendar, it is “Spring”. The recipe I am talking about today, is seriously so tasty, I have made it at least 6 times. It is creamy, cozy, savory, and easy as far as making pot pie from scratch goes. You can even make this for Easter dinner. This is something you can make, pop in the oven, then go have an Easter egg hunt with the kids, and then it will be ready to eat, when you come back! I am getting in…
