Homemade Vegan Pesto
Honestly I am really excited about this simple, easy, vegan pesto. I came up with this recipe because 1. I can’t have basil because I am allergic so I wanted to come up with an alternative because I really love and missed pesto. 2. I also am allergic to walnuts which is a common ingredient in most pestos. Pine nuts are also on the ingredient lists on store bought pestos, and pine nuts at the store- they are expennssiivee sis. Therefore, I came up with some different ingredients as a solution to my quandary. Hence this beautiful, creamy, smooth, aromatic pesto. Of course, there are always variations of the recipe.…
Quick and Easy Apple Crisp (Gluten Free)
Good afternoon my friends, family, supporters, and passerby strangers. Thanks for visiting my humble blog today! This apple crisp recipe may be one of the fastest and simplest desserts on my blog. It is 5 steps and very staple ingredients that most people have in their pantry. I like to describe apple crisp as a sort of upside pie. But it takes way less time to make a crisp than a pie. There is no crust, rather a granola type topping that gives the perfect crunch to a sweet and tangy recipe. I am not going to lie, I am not a huge pie person, and I don’t love hot…
Gluten Free Brownie Cookies w/ Ganache Center
It is October 1st and I can hardly believe it. Like where did September go?! Does anyone else feel like 2021 is going by at lightning speed? This week I bring to you, a new favorite dessert. It is not apple or pumpkin, but it is CHOCOLATE, and who doesn’t love chocolate? I am not going sugar coat it (pun intended), this recipe does take longer than your average cookie, but it is 1000% worth it. These delicious brownies cookies are more laborious because you have to make the chocolate ganache for the center, and refrigerating the dough takes some time as well. But the reason that I love this…
The Best Pumpkin Loaf with Streusel (Gluten-Free)
It is OFFICIALLY Fall people! We are two weeks into September and I have literally already seen dozens of pumpkin recipes flood my Instagram and Pinterest feeds. I get it, it’s super basic and super cliche, but everyone loves pumpkin recipes, and they make you feel happy, cozy, and warm. I love coming up with new, exciting, and different recipes. But sometimes ya gotta stick to the classics, because they just work and they are consistently great and tasty. I am going to be honest with you, I tinkered with this recipe couple times. I even went through all the effort of making the video and shooting the photos for…
Gluten and Dairy Free Chicken Meatballs with GF Pasta and Marinara
Summer 2021 has flown by, and we find ourselves at the beginning of September. The end of swimming in the lake, tanning by the pool, and picnics at the park is here. However, I am excited beyond reason, because that means that Fall is here! Which means the beginning of warm soups, pumpkin spice lattes, strolls through the park wearing scarves and beanies, and savory comforting food like spaghetti and meatballs! Which brings me to our recipe today! I love this recipe because it is quick, has simple ingredients, and is a delicious savory meal, done in under 30 minutes. You can definitely whip this up whether you are a…
Gluten & Dairy Free Healthy Breakfast Sandwich (w/ green avocado sauce)
This is a delicious and deletable breakfast sandwich that I recently starting making, and it has quickly become a favorite lunch or breakfast meal in my household. It has lots of protein (bacon, eggs), flavor, and as far as breakfast Sammys go, healthy! No gluten, no dairy, and lower fat (because of the turkey bacon) I currently cannot have pork or beef, due to a health issue I had awhile back, so I eat turkey bacon and turkey sausage. I found out how to to make my own hash-browns when I was on the Whole 30 and couldn’t find any frozen premade hash-browns that didn’t have any sugar in them.…
Gluten Free Silver Dollar Pancakes
Happy Monday! These silver dollar pancakes are SO cute and tasty. They are perfect for adults and kids will love them. They are made with almond flour and almond milk, making them gluten and dairy free. They also have honey as the sweetener, making it even better for you. I like these pancakes because the ingredients are simple, it takes 5 minutes to make the batter, and you can just throw all the ingredients in a bowl and mix! Couldn’t be easier. You can also substitute maple syrup in the pancakes if you don’t have honey. They are a great breakfast item that you can pair with scrambled eggs, bacon,…
Whole 30 Banana Muffins
(Gluten, Dairy, and Sugar-Free)Hey there friends! I am almost done with the Whole 30, I have 5 days left. I am in the home stretch! It has been difficult, but I am definitely feeling good. I have energy, my blood sugar has been more stable, my skin is clear, and I have even lost a few pounds. My best friend’s mom came to visit us a few weeks ago, and she shared with me a great muffin recipe she had found and modified. She had done the Whole 30 previously this year and these muffins were a life saver for her sweet cravings. I asked her if I could try the recipe, I…
Whole 30 Chicken Normandy with Apples & Coconut Cream
Hi folks! Happy (almost) Fathers Day! I am currently on day 17 of the Whole 30. I have been trying to come up with creative and delicious dinner ideas that are full of protein, delicious flavor, and healthy. I had never made Chicken Normandy before, but I knew that I wanted to make it, and I wanted it to be healthy and Whole 30 approved. The regular chicken normandy calls for creme fraise (basically sour cream), regular flour, brandy, and some other ingredients that are not gluten or dairy free. So I substituted coconut cream, chicken stock, almond flour, and it tasted great! All the amazing flavors, but better for…
Healthy Gluten-Free Thin Mint Cookies (Girl Scout Copy Cat)
Everyone loves Girl Scout Cookies. They are hard to find and in high demand 😉 They are also expensive, and not super good for you. But the flavor and taste are to die for. That’s why everyone loves them! Well here is a Paleo approved version of the classic Thin Mint Cookies. Let me tell, they taste extremely similar to the originals, but they are cheaper, healthier, and you can have them whenever you want! The recipe also a good amount so you can take half and put them in the freezer for later! Sounds like a good deal right? I just wanted to take a second and thank all…
