Easy Gluten-Free Cinnamon Coffee Cake
So I wanna give a quick backstory on how I came up with this Gluten-Free Cinnamon Coffee Cake recipe 🙂 When I was 15 years old, I found out that I was gluten intolerant. It was 2006, and there weren’t many options for gluten free items. I ate a lot of rice cakes, popcorn, and plantain chips. Gluten free flour consisted of either almond flour or coconut flour. It was boring and it sucked. But luckily, today in 2020, we have SO many options for gluten free items. It is amazing what they have been able to come up with. Gluten-free no longer means, boring and bland. It also does…
Gluten and Dairy Free Churro Waffles
Not only are these waffles, soft, delectable, and sweet, they are Paleo approved AND dairy/gluten free! Although these are dessert type waffles, you can have them for breakfast, brunch, or even an afternoon snack! I would also suggest serving them at parties like baby showers, bridal showers, or even a breakfast themed birthday party! These waffles can be topped with 100% pure maple syrup or fresh berries and ghee. The texture is fantastic, the batter is a normal consistency, and they taste great. These will not let you down. Also, these waffles were featured in a Buzzfeed article as well, which is super fun. If you wanna check it out,…
Gluten Free Berry Dessert Bars
Here is another great, flavorful, and unique dessert recipe. Even if you aren’t eating super healthy, this is still an amazing and delicious treat. If you like lighter fruity things like pie, cobbler, scones and such, these berry dessert bars are fantastic. It did not take me long to make them either (which is always a plus). Go ahead and try them out, they are an easy and sweet treat!
Paleo Chocolate Pie
I have the most delicious chocolate paleo pie in store for you today. My favorite things about it: refined sugar free, dairy free, AND gluten free. So what is it even made of? How is this possible, you may ask? At first, I was skeptical that I could make it taste good without white sugar, maple syrup, Stevia, etc. But once I made it and tasted it, I was shocked and pleasantly surprised. I would even go as far to say that it’s good for you. Because I mean flax seed is healthy right? So yep, that’s what I’m going to say. It’s good for you. It is creamy, chocolatey,…
Gluten- Free Caramel Mini Apple Pies
These little mini apple pies are so much fun to make! They are a great addition to your Thanksgiving dessert spread, or a cozy sweet dessert for any season of the year. But I am not gonna lie, I especially enjoy them during the Fall or Winter time. They are the perfect serving size, because they are small enough that you don’t feel like a pig if you eat two. It’s not just your typical apple pie because its gluten free and the caramel really tops it off. It really adds a unique and chewy flavor. The flaky dough makes it like a pastry that you never want to stop…
Gluten Free Peanut Butter Banana Muffins
Don’t mind me, Ill just be over here, snacking on delicious treats and sweets and healthy snacks. This particular recipe is healthy, gluten free, and perfect if you have a hankering for some carby baked goods. These are moist (because of the bananas), not too sweet, and a fantastic snack or breakfast side. They also combine two different flavors that you wouldn’t always think would go together. But for this particular muffin, it totally works! I used crunchy peanut butter which actually gave it great texture. 🙂 The recipe doesn’t seem like it would make a dozen muffins because there is only 1/4 cup of flour in it, but it…
Whole 30 Sweet Potato Chili
This is a recipe I created many years ago, when I decided to do the Whole 30. I wanted a delicious, flavorful, and hearty meal, and I modified a regular recipe to be Whole 30 approved. I have added a couple things since then, like beans, and it is still one of my favorite chili’s to this day. If you do want to make it Whole 30 approved, just omit the beans, and make sure your broths have no sugar added etc. It has few ingredients and takes only about 10-15 minutes to prepare. Even though it’s so simple, it is still extremely flavorful. Some tips: If you want it…
Gluten-Free Donut Holes
Before making these, I am going to be honest. I had never made donuts or donut holes before. However, there is a first time for everything! When I made it, the “dough” was more of a batter, I couldn’t really form any balls out of it, because it was too liquidy. I added a bit more mix and it made it better, but still not formable. So I used a mini ice cream scooper and gently plopped it into the hot oil and it worked just fine! They weren’t perfectly round circles but who wants perfection anyway? I also started with the oil too hot, which made the donuts golden…
Gluten & Dairy-Free Coconut Samoa Cookies
The Girl Scouts are back and this time and they are selling everyone’s favorite Samoa’s! Who doesn’t love the combination of gooey caramel, and crunchy coconut dunked in chocolate all on top of a cookie? This cookie brings together the perfect melange of flavors. The best part about this dessert to me is that it is gluten and dairy-free, which means guilt-free! The second best part is that it doesn’t even taste much different. So I can still have the same delectable goodness even though I have dietary restrictions. They aren’t crunchy like the normal samoas, they are soft and delectable. As soon as you bite into them, they crumble…
