Instant Pot Chicken Tacos
These Chicken Tacos may look like your typical tacos, but let me assure you, they are so much better. I don’t know about you, but I try and use my Instant Pot as often as possible. This amazing magic cooking machine that was invented, makes my life so much easier. You are literally throwing all the ingredients into a giant pot (your meat can even be frozen), hitting start, coming back 30 minutes later and BOOM your dinner is done. This is the DREAM. With this recipe your chicken can be frozen or fresh, you just have to adjust your time and water amount accordingly. If you are using frozen…
Best Crostini Appetizer with Feta and Sautéed Shallots
It is February folks! That means this is the month of the SUPER BOWL! I don’t know if you watch footballl, but I do! I have been watching the Super Bowl for many years now, and let me tell you, my favorite part of this lovely day is not the game, but the friends and the food. Everyone loves going to a great super bowl party where there is tons of appetizers, drinks, desserts, and usually nachos. Bringing appetizers to a party is a wonderful idea, because they are scrumptious finger food that a person can easily grab and walk around while talking to people. This particular appetizer should be…
Homemade Vegan Pesto
Honestly I am really excited about this simple, easy, vegan pesto. I came up with this recipe because 1. I can’t have basil because I am allergic so I wanted to come up with an alternative because I really love and missed pesto. 2. I also am allergic to walnuts which is a common ingredient in most pestos. Pine nuts are also on the ingredient lists on store bought pestos, and pine nuts at the store- they are expennssiivee sis. Therefore, I came up with some different ingredients as a solution to my quandary. Hence this beautiful, creamy, smooth, aromatic pesto. Of course, there are always variations of the recipe.…
Gluten and Dairy Free Chicken Meatballs with GF Pasta and Marinara
Summer 2021 has flown by, and we find ourselves at the beginning of September. The end of swimming in the lake, tanning by the pool, and picnics at the park is here. However, I am excited beyond reason, because that means that Fall is here! Which means the beginning of warm soups, pumpkin spice lattes, strolls through the park wearing scarves and beanies, and savory comforting food like spaghetti and meatballs! Which brings me to our recipe today! I love this recipe because it is quick, has simple ingredients, and is a delicious savory meal, done in under 30 minutes. You can definitely whip this up whether you are a…
Gluten & Dairy Free Healthy Breakfast Sandwich (w/ green avocado sauce)
This is a delicious and deletable breakfast sandwich that I recently starting making, and it has quickly become a favorite lunch or breakfast meal in my household. It has lots of protein (bacon, eggs), flavor, and as far as breakfast Sammys go, healthy! No gluten, no dairy, and lower fat (because of the turkey bacon) I currently cannot have pork or beef, due to a health issue I had awhile back, so I eat turkey bacon and turkey sausage. I found out how to to make my own hash-browns when I was on the Whole 30 and couldn’t find any frozen premade hash-browns that didn’t have any sugar in them.…
Cold Pasta Salad with Corn, Chicken, and Vinaigrette
Well hello there my blog friends and family, I hope you are having a fabulous week. It has been in the 90’s here in Idaho for weeks now, so it’s been a hot summer. For me, that means lots of pools, rivers, lakes, cold drinks, and eating food that is generally cold if possible. That’s why I love creating cold pasta recipes in the summer because the last thing you wanna eat when you are hot, is a hot meal. I created this recipe with a small and mighty pasta called orzo. If you have never heard of orzo pasta, it is a short grained pasta, usually made of white…
Whole 30 Chicken Normandy with Apples & Coconut Cream
Hi folks! Happy (almost) Fathers Day! I am currently on day 17 of the Whole 30. I have been trying to come up with creative and delicious dinner ideas that are full of protein, delicious flavor, and healthy. I had never made Chicken Normandy before, but I knew that I wanted to make it, and I wanted it to be healthy and Whole 30 approved. The regular chicken normandy calls for creme fraise (basically sour cream), regular flour, brandy, and some other ingredients that are not gluten or dairy free. So I substituted coconut cream, chicken stock, almond flour, and it tasted great! All the amazing flavors, but better for…
Easy Summer Quinoa Salad w/ Vinaigrette
Welcome to the weekend! I was actually going to post this recipe for Cinco De Mayo, but my laptop screen ended up getting cracked sadly, so I wasn’t able to finish the post until now. Fortunately, my sister and brother-in-law let me borrow their MacBook Air for the week, so I was able to edit the photos and get this post going. Yay! Anyways, this is a staple in my household. I have been making this cold quinoa salad for years, and the ingredients have evolved over time. This quinoa salad has crispy bell pepper, crunchy corn, soft black beans, salty feta, all topped with a zesty lemon vinaigrette. I…
Mediterranean Chicken Wrap with Homemade Hummus
This is a delicious lunch wrap that I created last year in 2020. It was November and I was living in Austin, Texas. For my 29th birthday, my best friend and I went downtown to have a fun picnic right by the river. It was a perfect, beautiful sunny day, and the river looked beautiful with its surrounding trees, and the Austin skyscraper buildings towering behind it. We packed a picnic lunch, and I wanted something light, healthy, and quick. Therefore the Mediterranean inspired chicken wrap was born. This wrap is great paired with apple slices and cheese on the side. You could also have some chips or crackers etc.…
Easy Chicken Pot Pie
Happy Spring! It is now officially Spring, and Easter is around the corner. Even though, here in Idaho it is currently snowing right now, according to the calendar, it is “Spring”. The recipe I am talking about today, is seriously so tasty, I have made it at least 6 times. It is creamy, cozy, savory, and easy as far as making pot pie from scratch goes. You can even make this for Easter dinner. This is something you can make, pop in the oven, then go have an Easter egg hunt with the kids, and then it will be ready to eat, when you come back! I am getting in…
