Best Crostini Appetizer with Feta and Sautéed Shallots
It is February folks! That means this is the month of the SUPER BOWL! I don’t know if you watch footballl, but I do! I have been watching the Super Bowl for many years now, and let me tell you, my favorite part of this lovely day is not the game, but the friends and the food. Everyone loves going to a great super bowl party where there is tons of appetizers, drinks, desserts, and usually nachos. Bringing appetizers to a party is a wonderful idea, because they are scrumptious finger food that a person can easily grab and walk around while talking to people. This particular appetizer should be…
Homemade Healthy Grain Free Granola
It is 2022 and everyone is looking to start eating healthy. You are finishing off the last of those gingerbread cookies, licking that last candy cane, and resolving to eat “better” this year. My wish for everyone is that this year is not the year of fad diets, purges, and “cutting out sugar”, but that living a healthy lifestyle, means eating more fruits, veggies, and good protein. This doesn’t mean you have to cut things out completely, or cut back on carbs and sugars. I think it means making wiser decisions in every day life. Eating healthy can be fun and flavorful, it doesn’t have to be boring or be…
Gluten Free Chocolate Chip Muffins
This recipe is one that is simple, uncomplicated, and can be used any time of year. I like these muffins because they can be a snack, side dish, breakfast treat, or a companion to your afternoon tea/coffee. Something to note about these muffins, is that they are best eaten and served within a day or two. They will be the most fresh, moist, flavorful. If you are wanting to have them for more than 2 days, I would put them in the freezer and pull them out at a later time. Gluten free pastries and baked goods are always different, as the flour makes the consistency different, so they become…
The Best Pumpkin Loaf with Streusel (Gluten-Free)
It is OFFICIALLY Fall people! We are two weeks into September and I have literally already seen dozens of pumpkin recipes flood my Instagram and Pinterest feeds. I get it, it’s super basic and super cliche, but everyone loves pumpkin recipes, and they make you feel happy, cozy, and warm. I love coming up with new, exciting, and different recipes. But sometimes ya gotta stick to the classics, because they just work and they are consistently great and tasty. I am going to be honest with you, I tinkered with this recipe couple times. I even went through all the effort of making the video and shooting the photos for…
Whole 30 Banana Muffins
(Gluten, Dairy, and Sugar-Free)Hey there friends! I am almost done with the Whole 30, I have 5 days left. I am in the home stretch! It has been difficult, but I am definitely feeling good. I have energy, my blood sugar has been more stable, my skin is clear, and I have even lost a few pounds. My best friend’s mom came to visit us a few weeks ago, and she shared with me a great muffin recipe she had found and modified. She had done the Whole 30 previously this year and these muffins were a life saver for her sweet cravings. I asked her if I could try the recipe, I…
Moist Almond Poppy Seed Muffins (Refined Sugar-Free)
I am a huge fan of eating baked goods, pastries, bagel, etc. for snacks. Yes, it isn’t the healthiest, but carbs just taste SO good sometimes. In the afternoon, when I am getting the munchies, and I am heading out the door running my last errand of the day, and I know I will be hungry and peckish soon, I love grabbing an apple, some cheese, and maybe a handful of trail mix. But occasionally, it is just easier and more fun to grab a good ol’ baked good. I love grabbing a muffin on the way out, and just eating it, in the car, possibly getting crumbs everywhere. I…
Gluten Free Peanut Butter Banana Muffins
Don’t mind me, Ill just be over here, snacking on delicious treats and sweets and healthy snacks. This particular recipe is healthy, gluten free, and perfect if you have a hankering for some carby baked goods. These are moist (because of the bananas), not too sweet, and a fantastic snack or breakfast side. They also combine two different flavors that you wouldn’t always think would go together. But for this particular muffin, it totally works! I used crunchy peanut butter which actually gave it great texture. 🙂 The recipe doesn’t seem like it would make a dozen muffins because there is only 1/4 cup of flour in it, but it…
