Gluten Free Raspberry Brownies (DF, RSF, Low Fat)

Description

Moist, decadent raspberry brownies made with homemade jam. Gluten, dairy and refined sugar free! Also low fat. 


Ingredients

Brownies:

  • 1/2 cup Gluten Free flour blend
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • pinch of salt
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup pure maple syrup
  • 1/2 cup unsweetened apple sauce
  • 2 tablespoons avocado oil
  • 3/4 teaspoon pure vanilla
  • 1 egg
  • Homemade Raspberry Jam

Homemade Raspberry Jam

  • 1 pint of fresh raspberries
  • 1/2 cup sugar
  • 1 teaspoon of fresh lemon juice

Instructions

Homemade Raspberry Jam:

  1. Put fresh raspberries into a medium sized sauce pan with sugar and lemon juice. Turn on medium heat and crush the raspberries with a spatula.
  2. Let simmer for 10-15 minutes, stirring constantly until a jam like consistency is reached. When the jam can coat the back of the spoon, without sliding off, it is ready. Set aside and let cool for 20-30 minutes.
  3. Transfer to a mason jar.

Brownies:

  1. Preheat oven to 350 degrees F and grease an 8×8 baking pan
  2. In a small bowl, mix together the maple syrup with the unsweetened cocoa powder
  3. Grab a large bowl and mix together all the dry ingredients (GF flour, baking soda, baking powder, salt)
  4. Add the maple syrup and unsweetened cocoa powder mixture to the large bowl. Then add egg, oil, vanilla, and apple sauce
  5. Mix well and pour into the greased 8×8 baking pan. Smooth out and dollop a few tablespoons of the homemade jam into different places in the pan. Take a small knife or toothpick and swirl the raspberry jam around in the batter semi evenly.
  6. Bake in the preheated oven for 17-20 minutes. Check with a toothpick to see if it comes out clean. Set on a wire cooling rack for 5 minutes then enjoy!

Notes

Store bought jam can be used instead of homemade
